so funny and sad where he says during his tasting all of the mis en place that this often times constitutes his dinner while the other chefs eat family dinner together. This is a hard life and I give kudos to this chef for his amazing dedication, palate, and obvious intelligence and skill set.

Imagine going to a legendary restaurant where everything is thought out to the finest detail. Fresh food arriving daily and is on the menu hours after it arrives. Then you ask "Do you have any plant based options?" I can only imagine how insulted the chefs must have been before they agreed.

Going to a tasting menu restaurant like this one, that is quite literally made so you can experience the art they have created, and then asking them to cater to your beliefs is extremely rude. Would you go into a museum and tell the artist they should add more blue to their painting because then it relates to you more?
